Description

Ground chicken chili serves as a lean, protein-packed alternative to traditional beef versions while delivering deep, savory flavor profiles. This hearty meal balances aromatic spices with fresh vegetables to create a satisfying bowl for any occasion. By browning the ground chicken thoroughly, you develop a caramelized base that provides a foundation for the perfect southwestern experience.

Ingredients

Scale

2 lbs Ground Chicken
2 cans Black Beans, rinsed
1 can Fire Roasted Tomatoes
1 medium Yellow Onion, diced
2 whole Bell Peppers, diced
2 cups Chicken Stock, low-sodium
3 tablespoons Chili Powder
1 tablespoon Cumin
4 cloves Garlic, minced
1 tablespoon Olive Oil

Instructions

Heat olive oil in a large heavy-bottomed pot over medium-high heat.
Add the ground chicken and break it apart into small, uniform crumbles.
Brown the meat until it reaches a deep golden hue and no pink remains.
Add the diced onions, bell peppers, and minced garlic to the pot.
Sauté the mixture for 5 minutes until the vegetables soften.
Stir in the chili powder, cumin, and fire-roasted tomatoes.
Pour in the black beans and chicken stock.
Bring the mixture to a gentle boil, then reduce heat to low.
Simmer for 20-25 minutes to allow flavors to meld and the chili to thicken.

Notes

Substitute ground chicken with ground turkey if preferred. Adjust the chili powder levels based on your heat preference. Store leftovers in an airtight container for up to 3 days.
