Ingredients
1 lb ground beef (lean, 80/20)
2 cups long-grain white rice
1 packet taco seasoning mix (or 2 tbsp homemade)
1 cup frozen mixed vegetables (corn, black beans, peas)
1 cup shredded lettuce
1/2 cup tomato sauce
1/2 cup cheddar cheese
1/4 cup sour cream
1/2 cup tortilla chips
Instructions
Wash rice under cold water until water runs clear
In a medium pot, bring 3 cups water to boil. Add rice and salt (if using). Simmer covered for 18-20 minutes until tender
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat
Add taco seasoning to the beef and stir to coat. Incorporate frozen vegetables, simmer 5-7 minutes
Top steamed rice with beef mixture, lettuce, tomato sauce, cheese, sour cream, and crushed tortilla chips before serving
