Ingredients
Ground beef (80/20), 1 lb (450g) (use lean ground turkey or chicken as a substitute)
Taco seasoning mix, 1 packet (or 2 tablespoons自制)
Whole wheat tortillas, 12 (6-inch) (use corn tortillas for a gluten-free option)
Shredded cheddar cheese, 1 cup (melted mozzarella or vegan cheese alternatives work)
Avocado slices, 1 medium (optional: swap with diced tomatoes or salsa)
Lime wedges, 4 (enhances freshness and balances spice)
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Heat a skillet over medium heat, add ground beef, and cook until browned and crumbly, 8-10 minutes. Drain excess fat.
Stir in taco seasoning and 1/2 cup water, simmering until the mixture thickens, about 5 minutes. Set aside.
Place tortillas on the prepared baking sheet, spacing evenly. Top each with 1/4 cup ground beef mixture and a handful of shredded cheese.
Return to oven and bake for 10-12 minutes, until cheese is melted and bubbly.
Notes
For a lighter version, use ground turkey or chicken and low-fat cheese.
Tortillas can be oven-warmed first to enhance crispiness.
Stuffed tortillas can be frozen (unbaked) for up to 2 months; bake frozen at 375°F for 25-30 minutes.
Serve with optional avocado slices, lime wedges, and preferred toppings like lettuce or cilantro.
