Description

A fresh grilled chicken salad made with juicy marinated chicken, crisp vegetables, and a lemon olive oil dressing. High in protein, light, and full of Mediterranean flavor.


Ingredients

Scale
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 1/2 tsp paprika
  • Salt and black pepper
  • 4 cups lettuce
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1/4 cup olives
  • 2 tbsp feta cheese
  • 2 tbsp olive oil (dressing)
  • Juice of 1 lemon
  • 1 garlic clove

Instructions

  1. Season chicken with olive oil, oregano, paprika, salt, and pepper.
  2. Grill chicken until fully cooked.
  3. Let rest, then slice.
  4. Prepare lettuce, tomatoes, cucumber, onion, and olives.
  5. Whisk olive oil, lemon juice, garlic, salt, and pepper.
  6. Add chicken on top of salad.
  7. Drizzle dressing over everything.
  8. Add feta and serve.

Notes

Chicken can be grilled ahead and stored for 3 days. Best served fresh. Add avocado or quinoa for variation.
