Description
A fresh grilled chicken salad made with juicy marinated chicken, crisp vegetables, and a lemon olive oil dressing. High in protein, light, and full of Mediterranean flavor.
Ingredients

- 2 chicken breasts
- 2 tbsp olive oil
- 1 tsp oregano
- 1/2 tsp paprika
- Salt and black pepper
- 4 cups lettuce
- 1 cup cherry tomatoes
- 1 cucumber
- 1/2 red onion
- 1/4 cup olives
- 2 tbsp feta cheese
- 2 tbsp olive oil (dressing)
- Juice of 1 lemon
- 1 garlic clove
Instructions
- Season chicken with olive oil, oregano, paprika, salt, and pepper.
- Grill chicken until fully cooked.
- Let rest, then slice.
- Prepare lettuce, tomatoes, cucumber, onion, and olives.
- Whisk olive oil, lemon juice, garlic, salt, and pepper.
- Add chicken on top of salad.
- Drizzle dressing over everything.
- Add feta and serve.
Notes
Chicken can be grilled ahead and stored for 3 days. Best served fresh. Add avocado or quinoa for variation.
