Ingredients
2 lbs fresh green beans, trimmed and cut into 2-inch pieces
6 cloves garlic, finely minced
1 lb cremini mushrooms, sliced thin
1 cup vegetable broth, low sodium
1/2 cup heavy cream
2 cups crispy fried onions, divided
3 tbsp unsalted butter
1 tsp fresh thyme leaves
Instructions
Preheat oven to 375°F (190°C).
Boil a large pot of salted water and blanch the green beans for four minutes until bright green.
Drain the beans and submerge in an ice water bath to stop cooking, then pat dry.
Melt butter in a large skillet over medium heat.
Add mushrooms and cook for eight minutes until browned and dry.
Stir in minced garlic and thyme, cooking for one minute until fragrant.
Pour in vegetable broth and heavy cream, simmering until the sauce slightly thickens.
Fold in the green beans and half of the fried onions.
Transfer mixture to a baking dish and top with remaining fried onions.
Bake for 15-20 minutes until bubbly and golden.
Notes
Ensure the green beans are thoroughly dried after blanching to prevent a watery sauce. You can prepare the mushroom base up to a day in advance for easier holiday meal prep.
