Ingredients
Scale
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes
- 1 cucumber
- 1/2 red onion
- 1/2 cup Kalamata olives
- 1/2 cup feta cheese
- 1/4 cup parsley
- 2 tbsp mint
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp oregano
- Salt and pepper
Instructions
- Rinse quinoa well
- Cook in boiling water 15 minutes
- Cool and fluff
- Chop vegetables
- Mix all ingredients
- Prepare dressing
- Toss everything together
- Serve fresh or chilled

Let quinoa cool before mixing. Store in fridge up to 3 days. Add dressing before serving for best freshness.
