Description

A timeless American comfort food classic with ground beef, soaked oats, and aromatic herbs. This hearty, moist meatloaf celebrates traditional home-cooked flavors without pork, lard, or alcohol.


Ingredients

Scale

2 lbs ground beef
1 cup rolled oats
1 large egg
1 large onion, sliced
2 cloves garlic, minced
1/3 cup chopped parsley
3/4 cup ketchup


Instructions

Preheat oven to 350°F
Soak oats in 1/2 cup milk or beef broth for 15 minutes
Sauté onion and garlic in a pan until softened
Combine soaked oats, egg, parsley, 1 tsp salt, and 1 tsp pepper in a bowl
Fold into ground beef until well mixed
Press mixture into a greased loaf pan
Mix 3/4 cup ketchup, 2 tbsp alcohol-free Worcestershire sauce, and 1 tsp dried thyme for glaze
Spread glaze over the top of the loaf
Bake for 1 hour 20 minutes or until internal temperature reaches 160°F
Let rest for 15 minutes before slicing

Notes

Substitute ground turkey for ground beef
Use gluten-free rolled oats if needed
Applesauce can replace egg for moisture
Add 1 cup unsweetened applesauce for an alcohol-free, meaty texture
