Description

Gougères with Chives are light and airy French cheese puffs made from classic choux pastry blended with grated Gruyère and fresh chives. These elegant savory bites are golden on the outside, soft and cheesy inside, and perfect for appetizers, brunch, or special gatherings. Simple ingredients transform into impressive, bakery-style treats that are best served warm.


Ingredients

  • ½ cup (120ml) water
  • ½ cup (120ml) whole milk
  • ½ cup (115g) unsalted butter
  • 1 cup (125g) all-purpose flour
  • 4 large eggs, room temperature
  • 1 cup (100g) grated Gruyère cheese
  • 2 tablespoons fresh chives, finely chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, milk, butter, and salt. Bring to a gentle boil over medium heat.
  3. Remove from heat and add flour all at once. Stir vigorously until a smooth dough forms.
  4. Return pan to low heat and cook for 1–2 minutes until the dough pulls away from the sides.
  5. Let the dough cool for about 5 minutes.
  6. Add eggs one at a time, mixing thoroughly after each addition until smooth.
  7. Stir in grated cheese, chopped chives, and black pepper.
  8. Spoon or pipe small mounds onto the prepared baking sheet, spacing them apart.
  9. Bake for 20–25 minutes until puffed and golden brown. Do not open the oven door during baking.
  10. Allow to cool slightly before serving warm.

Notes

Use finely grated cheese for smooth melting. Make sure eggs are at room temperature for best texture. Gougères taste best served warm but can be reheated in a 170°C (340°F) oven for 5–8 minutes. You can freeze unbaked piped dough and bake directly from frozen, adding a few extra minutes to the baking time.
