Ingredients

  • 4 eggs
  • 1 cup heavy cream
  • ½ cup milk
  • 150g goat cheese
  • 1 cup spinach
  • 1 small onion
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp nutmeg
  • 2 tbsp fresh herbs

Instructions

  1. Preheat oven to 180°C.
  2. Place crust in pan.
  3. Sauté onion and spinach.
  4. Whisk eggs, cream, and milk.
  5. Add seasoning.
  6. Layer vegetables and cheese in crust.
  7. Pour egg mixture.
  8. Bake 35–40 minutes.
  9. Cool slightly and serve.

Notes

Use fresh goat cheese for best taste. Add mushrooms or tomatoes if desired. Store in fridge up to 3 days.
