Description

This Goat Cheese and Spinach Salad is a fresh and flavorful dish made with tender spinach, creamy goat cheese, crunchy walnuts, and crisp apples, all tossed in a light homemade dressing. Perfect for a quick lunch or elegant side.


Ingredients

  • 5 cups fresh baby spinach
  • 120g goat cheese, crumbled
  • ½ cup walnuts, toasted
  • ½ small red onion, thinly sliced
  • 1 apple, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Wash and dry the spinach thoroughly.
  2. Toast walnuts in a dry pan for a few minutes and let cool.
  3. Thinly slice the apple and red onion.
  4. Crumble the goat cheese.
  5. Whisk together olive oil, honey, Dijon mustard, lemon juice, salt, and pepper.
  6. Combine spinach, apple, onion, and walnuts in a bowl.
  7. Drizzle dressing over the salad and toss gently.
  8. Top with goat cheese and serve immediately.

Notes

For best texture, add dressing just before serving. You can substitute pears for apples or pecans for walnuts. Store leftovers in the fridge for up to one day.
