Ingredients
- 2 cups almond flour (finely ground)
- 3/4 cup granulated sugar
- 2 large egg whites
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
- Zest of 1 orange
- 1 cup pine nuts
- Pinch of salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 170°C (340°F) and line a baking tray with parchment paper.
- In a bowl, mix almond flour, sugar, and salt.
- Add egg whites, vanilla extract, almond extract, and orange zest. Mix until a soft dough forms.
- Roll dough into small balls and place on prepared tray.
- Press pine nuts generously onto the top of each cookie.
- Bake for 15–18 minutes until edges turn lightly golden.
- Allow cookies to cool completely before dusting with powdered sugar.
Notes
Chill the dough for 20 minutes if it feels sticky. Lightly toast pine nuts before using for deeper flavor. Store cookies in an airtight container at room temperature for up to 5 days. Freeze unbaked shaped cookies and bake from frozen with 2–3 extra minutes.
