Description

A vibrant, sweet dessert pizza featuring a buttery puff pastry crust, caramelized strawberry glaze, and a medley of fresh fruits. Perfect for a no-alcohol, pork-free treat with a restaurant-quality finish, baked in under an hour.

Ingredients

Scale

2 pre-rolled puff pastry sheets (cold, gluten-free option available)
12 whole strawberries (very ripe)
2 chopped strawberries (very ripe)
3 tbsp granulated sugar (swap with coconut sugar for lower GI)
1/4 cup honey (omit for vegan)
1 tbsp lemon juice (optional for tangy citrus in glaze)
Lemon zest (1 tsp, optional for flavor boost)

Instructions

Thaw refrigerated puff pastry for 30 minutes until malleable
Wash and hull 12 strawberries; set aside whole. Halve 2 additional strawberries for glaze
Toss chopped strawberries with 3 tbsp sugar and 1 tsp lemon zest until juice releases
Place thawed pastry on a baking sheet; refrigerate briefly to firm
Arrange 12 whole strawberries in a radial pattern on the pastry
Bake at 375°F for 12–15 minutes until golden and crisp
Immediately brush melted glaze (strawberry-sugar mixture and 1 tbsp lemon juice) over warm crust using room-temperature glaze

Notes

Chill pastry before baking to prevent shrinkage
Apply glaze while crust is warm for best adhesion
Use agave syrup as a vegan honey substitute (tropical notes)
Swap puff pastry for whole wheat dough to add nutty flavor
Serve with whipped cream or plant-based alternative for extra richness
