Description

Indulge in a restaurant-quality meal right in your own kitchen with this Garlic Tuscan Chicken. Featuring succulent, pan-seared chicken breasts enveloped in a velvety, herb-infused cream sauce, this dish is a perfect blend of comfort and elegance. With the addition of tangy sun-dried tomatoes and fresh, nutrient-rich spinach, this one-pan dinner is designed for busy weeknights when you want maximum flavor with minimal cleanup. It is a hearty, balanced, and sophisticated dish that pairs beautifully with pasta or crusty bread.

Ingredients

Scale

2 lbs chicken breasts, thinly sliced
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped and drained
3 cups fresh spinach, firmly packed
4 cloves garlic, minced
1/2 cup Parmesan cheese, freshly grated
1/2 cup low-sodium chicken broth
2 tablespoons olive oil
Salt, pepper, and dried oregano to taste

Instructions

Season chicken breasts liberally with salt, pepper, and dried oregano.
Heat two tablespoons of olive oil in a large skillet over medium-high heat.
Place chicken in the pan and cook for 5 to 6 minutes per side until golden brown.
Remove chicken from the skillet and set aside on a clean plate.
Lower the heat to medium and add minced garlic to the skillet, sautéing for one minute until fragrant.
Pour in chicken broth and use a wooden spoon to deglaze the pan by scraping up browned bits.
Stir in the heavy cream, sun-dried tomatoes, and Parmesan cheese.
Simmer the sauce gently for 3 minutes until it thickens slightly.
Add the fresh spinach to the skillet and stir until it wilts into the sauce.
Return the cooked chicken breasts to the pan and coat them thoroughly in the cream mixture.

Notes

Ensure you drain the oil from the sun-dried tomatoes to keep the sauce from becoming too greasy. For a lighter version, you can substitute half-and-half for the heavy cream, though the texture will be less luxurious. Serve immediately over linguine, mashed potatoes, or alongside steamed vegetables.
