Ingredients
2 lbs chicken thighs (boneless or skin-on)
4 tbsp unsalted butter
6 cloves fresh garlic, minced
1 tbsp olive oil
2 tbsp fresh parsley, chopped
Salt and pepper to taste
Instructions
Pat the chicken thighs completely dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Place chicken in the skillet skin-side down and sear for 6 to 8 minutes until golden brown.
Flip the chicken and cook for another 5 to 7 minutes until the internal temperature reaches 165°F.
Reduce heat to medium and add the butter to the skillet.
Once the butter is melted, add the minced garlic and cook for 1 minute until fragrant.
Baste the chicken continuously with the garlic butter sauce for the final minute of cooking.
Garnish with fresh parsley and serve immediately.
Notes
Ensure the chicken is patted very dry to achieve the best sear. Use grass-fed butter for a richer taste. If using bone-in thighs, cook for an additional 5-10 minutes to ensure they are fully cooked through.
