Description
A comforting, flavor-packed one-pot meal that elevates simple ingredients into a gourmet dinner. By searing tender chicken breast in rich butter and toasting rice grains in aromatic garlic, this dish creates a deeply savory profile. It is a perfect solution for busy weeknights, offering minimal cleanup without compromising on the depth of flavor. The rice becomes perfectly fluffy and infused with the essence of chicken and fresh herbs, making every bite satisfying and delicious.
Ingredients
1.5 lbs chicken breast, cut into bite-sized cubes
2 cups long grain rice, rinsed
4 tbsp unsalted butter, divided
6 cloves garlic, minced finely
3 cups low-sodium chicken broth
2 tbsp fresh parsley, chopped
Instructions
Heat two tablespoons of butter in a large skillet over medium-high heat.
Add the chicken cubes in a single layer and brown on all sides until golden, then remove from the skillet.
Melt the remaining two tablespoons of butter in the same skillet and sauté the minced garlic until fragrant.
Add the rinsed rice to the pan and toast for two minutes until edges are translucent.
Pour in the chicken broth and scrape the bottom of the pan to release browned bits.
Return the chicken to the skillet and bring the mixture to a gentle boil.
Cover tightly with a lid and reduce heat to low for 18 minutes.
Remove from heat and let sit covered for five minutes, then fluff with a fork and garnish with parsley.
Notes
Use a heavy-bottomed skillet for even heat distribution to prevent the rice from scorching. Ensure the rice is rinsed well to remove excess starch for a fluffier texture. Store leftovers in an airtight container for up to 3 days.
