Ingredients
1.5 lbs chicken thighs (skinned or skin-on)
1/2 cup unsalted butter
6 garlic cloves (minced or pressed)
1 lemon (zest and juice)
2 tbsp non-alcoholic wine substitute
Fresh parsley for garnish
Instructions
Pat chicken dry, cut into 1-inch pieces
Cut butter into 1/4-inch slices, let sit 10 minutes
Thin garlic cloves, combine with lemon zest
Heat skillet over medium-low, add butter with garlic
Simmer 1-2 minutes until golden, gently stir in chicken
Cook 3-4 minutes per side until golden
Pour in non-alcoholic wine substitute, boil and scrape pan
Simmer 8-10 minutes at low heat until chicken reaches 165°F
Stir in parsley, spoon extra sauce over chicken
Rest 5 minutes, drizzle with lemon juice before serving
