Ingredients
4 boneless, skinless chicken breasts
4 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon all-purpose flour
1/2 teaspoon dried thyme
1/4 cup chicken broth
1 tablespoon lemon juice
Salt and pepper, to taste
Instructions
Preheat oven to 375°F (190°C)
Season chicken breasts with salt and pepper on both sides
Heat olive oil in an oven-safe skillet over medium-high heat
Add chicken breasts to the skillet and cook for 2-3 minutes per side, or until golden. Remove and set aside
In the same skillet, add unsalted butter and let it melt completely
Add minced garlic and sauté for 1 minute
Sprinkle flour over the mixture, stirring for 1 minute to create a roux
Pour in chicken broth and stir well to combine
Add lemon juice and thyme, and season with additional salt and pepper
Return the chicken breasts to the skillet. Spoon the sauce evenly over them
Place the skillet into the oven and bake for 15-20 minutes
Use an instant-read thermometer to check that the internal temperature reaches 165°F (74°C)
Let the chicken rest for 5 minutes before serving
