Description

Ingredients

4 ears fresh shucked corn (husks removed but silks intact)
2 tbsp mayonnaise (full fat recommended)
1/2 cup crumbled cotija cheese or feta cheese
1 tsp chili powder
0.5 tsp kosher salt


Instructions

Preheat barbecue grill to 450°F
Remove husks from corn ears but leave silks for moisture protection
Brush corn with mayonnaise using a pastry brush
Sprinkle with cotija cheese, chili powder, and salt while on the grill
Grill for 2–3 minutes until cheese is melted and corn is charred

Notes

Ensure corn is at room temperature before grilling for best char
Apply mayonnaise immediately before grilling to prevent steaming
Use grill tongs to hold corn while seasoning to retain coverage
Crimp grates with tin foil if using a standard grill to catch falling cheese
