Description

Ingredients

2 tbsp flaxseed meal
6 tbsp water
1 cup unsweetened cocoa powder
3/4 cup sugar
1/2 cup unsweetened applesauce
1/2 cup vegan butter, cold
1 cup all-purpose flour
2 tbsp soy flour
1/4 tsp salt
1 tsp alcohol-free vanilla extract
1/2 tsp baking powder


Instructions

Preheat oven to 350°F (175°C)
Grease an 8×8-inch pan and line it with parchment paper
Mix flaxseed meal with water and let sit for 5 minutes to form a gel
In a separate bowl, whisk sugar, cocoa powder, and salt
Add applesauce and vegan butter, mixing until smooth
Stir in the flaxseed mixture and vanilla extract
Gradually fold in flour and soy flour
Pour the batter into the prepared pan
Sprinkle any optional add-ins on top if desired
Bake for 30 minutes or until a toothpick inserted in the center comes out with just a few moist crumbs
Let cool completely before cutting into squares

Notes

Use freshly ground flaxseeds for the best texture
Replace sugar with coconut sugar for a caramel taste
Swap all-purpose flour with almond flour for a nutty variation
