  • 3 medium zucchinis, sliced into rounds
  • 3 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Juice of ½ lemon
  • ¼ cup crumbled feta cheese (optional)

Instructions

  1. Wash and slice the zucchinis into even rounds.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Sauté the chopped onion for 3–4 minutes until soft and translucent.
  4. Add the minced garlic and cook for 1 minute until fragrant.
  5. Add the zucchini slices in a single layer and season with oregano, thyme, paprika, salt, and black pepper.
  6. Cook for 8–10 minutes, stirring occasionally, until the zucchini is tender and lightly golden.
  7. Squeeze fresh lemon juice over the zucchini and gently toss.
  8. Sprinkle with chopped parsley and top with crumbled feta cheese if desired.
  9. Serve warm or at room temperature.

Notes

Choose firm, shiny zucchinis for the best texture. Avoid overcrowding the pan to allow proper caramelization. Add chili flakes for a spicy variation. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently in a skillet. This dish is not suitable for freezing as zucchini becomes too soft.
