Description

Easy Pine Nut Cookies are soft, buttery, and delicately sweet treats topped with golden pine nuts. Ingredients

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (100g) pine nuts
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Cream softened butter and sugar together until light and fluffy.
  3. Add egg and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix dry ingredients into the butter mixture until just combined.
  6. Fold in half of the pine nuts.
  7. Roll dough into small balls and place on prepared baking sheet.
  8. Press remaining pine nuts gently onto the tops of each cookie.
  9. Bake for 12–15 minutes until edges turn lightly golden.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the dough to keep cookies tender. If the dough feels soft, chill for 20–30 minutes before baking. Store in an airtight container at room temperature for up to 5 days. Freeze unbaked dough balls for up to 2 months and bake directly from frozen, adding 2 extra minutes.
