Ingredients
Crushed graham crackers 1 cup
Vanilla wafers 1/2 cup
Pure maple syrup 1/3 cup
Cream cheese (room temperature) 8 oz
Fresh lemon juice 1 tbsp
Cooked and cooled rice 1 cup
Instructions
Combine crushed graham crackers and vanilla wafers in a bowl. Mix with 2 tablespoons maple syrup until clumpy. Press into an 8-inch springform pan.
Refrigerate crust for 20 minutes to firm.
Whip cream cheese until smooth, then add remaining maple syrup, 1/2 tsp vanilla, and lemon juice. Blend until silky.
Fold in cooked rice, ensuring even distribution without overmixing.
