1.5 lbs chicken breasts, pounded thin
1/2 cup sun-dried tomatoes, chopped (oil-packed preferred)
1 cup heavy cream
1/2 cup freshly grated parmesan cheese
1/2 cup low-sodium chicken broth
3 cloves garlic, minced
1 tsp Italian seasoning
2 tbsp extra virgin olive oil
Salt and black pepper to taste


Instructions

Pound the chicken breasts to an even half-inch thickness.
Season both sides of the chicken generously with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat.
Sear the chicken for about five minutes per side until golden brown, then remove and set aside.
In the same skillet, add minced garlic and sauté for one minute until fragrant.
Pour in the chicken broth, deglazing the pan by scraping up any browned bits.
Reduce heat to medium-low, stir in the heavy cream and sun-dried tomatoes, and simmer until slightly thickened.
Stir in the parmesan cheese until melted and smooth.
Return the chicken to the skillet, coating it in the sauce, and heat through before serving.

Notes

Ensure you use freshly grated parmesan cheese for the best melting consistency. If the sauce becomes too thick, add a tablespoon of chicken broth or water to reach your desired consistency. Serve over pasta, mashed potatoes, or with crusty bread.
