Ingredients
12 lasagna noodles
15 oz whole milk ricotta cheese
10 oz frozen spinach, thawed and squeezed dry
2 cups mozzarella cheese, shredded
24 oz high-quality marinara sauce (no pork)
0.5 cup parmesan cheese, finely grated
1 large egg
Instructions
Preheat your oven to 375°F (190°C).
Boil a large pot of salted water and cook lasagna noodles until al dente, drain and lay flat on parchment paper.
In a large bowl, whisk together the ricotta cheese, spinach, parmesan, and beaten egg until well combined.
Spread about 2 tablespoons of the ricotta mixture over the bottom half of each noodle.
Roll each noodle tightly from the bottom to the top.
Spread a thin layer of marinara sauce on the bottom of a 9×13 baking dish.
Place the roll-ups seam-side down in the dish.
Top with the remaining marinara sauce and sprinkle with mozzarella cheese.
Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until bubbly and the cheese is melted.
Notes
Ensure the spinach is squeezed as dry as possible to prevent a watery filling. These roll-ups can be assembled ahead of time and refrigerated before baking, or frozen for up to 2 months.
