- 1 pie crust
- 4 eggs
- 1 cup heavy cream
- 1/2 cup milk
- 1 cup shredded cheese
- 1/2 cup cooked spinach
- 1/2 cup cooked onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
Instructions
- Preheat oven to 180°C (350°F).
- Place crust in pan and pre-bake for 10 minutes.
- Cook vegetables in olive oil.
- Whisk eggs, cream, milk, and spices.
- Add vegetables and cheese to crust.
- Pour egg mixture over filling.
- Bake for 35–40 minutes.
- Let cool slightly before serving.
Notes
Use any vegetables you like. Store in fridge up to 3 days. Reheat in oven for best texture.
