Description

This Easy Gougères Recipe creates light, airy French cheese puffs made from simple choux pastry and grated Gruyère. Crisp on the outside and soft on the inside, these savory bites are perfect for appetizers, brunch, holiday gatherings, or pairing with soup and salad. Elegant yet simple, gougères require only basic pantry ingredients and deliver rich, cheesy flavor in every bite.


Ingredients

  • ½ cup (120 ml) water
  • ½ cup (120 ml) whole milk
  • ½ cup (115 g) unsalted butter
  • 1 cup (125 g) all-purpose flour
  • 4 large eggs, room temperature
  • 1 cup (100 g) grated Gruyère cheese (or sharp cheddar)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of ground nutmeg (optional)

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, milk, butter, and salt. Heat until the butter melts and the mixture begins to simmer.
  3. Remove from heat and add all the flour at once. Stir vigorously with a wooden spoon until a smooth dough forms.
  4. Return the pan to low heat and cook for 1–2 minutes to remove excess moisture.
  5. Transfer the dough to a mixing bowl and let it cool for 5 minutes.
  6. Add the eggs one at a time, mixing well after each addition until smooth.
  7. Fold in grated Gruyère cheese, black pepper, and nutmeg.
  8. Spoon or pipe small mounds onto the prepared baking sheet.
  9. Bake for 20–25 minutes until puffed and golden brown.
  10. Allow to cool slightly before serving.

Notes

Use room-temperature eggs for better texture. Do not open the oven door during baking to prevent deflation. Reheat in the oven at 170°C (340°F) for 5–8 minutes to restore crispness. Gougères can be frozen baked or unbaked for up to 1 month.
