Ingredients
4 (6 oz) chicken breasts
2 cups marinara sauce
1 cup panko breadcrumbs
1/2 cup grated Parmesan
1 tbsp Italian seasoning
1 tsp garlic powder
1 large egg
1 1/2 cups shredded mozzarella
Instructions
Preheat oven to 425°F
Line baking sheet with parchment paper
In shallow dish, mix panko, Parmesan, Italian seasoning, and garlic powder
Whisk egg in separate dish
Pat chicken dry, dip in egg, then press into breading mixture
Place chicken on prepared sheet
Bake 15 minutes until golden
Spoon 1 cup marinara over each piece, then top with 1/2 cup mozzarella
Return to oven 8-10 minutes until cheese is bubbly and browned
Rest 5 minutes before serving
Garnish with fresh parsley
