- 2 cups couscous
- 2 cups hot vegetable broth
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 zucchini, diced
- 1 carrot, diced
- 1 red bell pepper, chopped
- 1 cup chickpeas
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Juice of 1 lemon
- Fresh parsley
Instructions
- Heat olive oil in a large pan over medium heat.
- Sauté onion until soft and translucent.
- Add garlic and cook for 30 seconds.
- Add carrot, zucchini, and bell pepper and cook until slightly tender.
- Stir in chickpeas and spices.
- Place couscous in a bowl and pour hot broth over it.
- Cover and let it sit for 5–7 minutes.
- Fluff couscous with a fork.
- Mix couscous with vegetables.
- Add lemon juice and fresh parsley, then serve.
Notes
Add raisins for sweetness or toasted almonds for crunch. Store in fridge up to 3 days. Reheat with a splash of water or olive oil.
