Description

This Easy Couscous Recipe is a warm, fluffy Mediterranean dish made with couscous, vegetables, chickpeas, olive oil, and aromatic spices. It is quick, healthy, and perfect for family meals or meal prep.


Ingredients

  • 2 cups couscous
  • 2 cups hot vegetable broth
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 carrot, diced
  • 1 red bell pepper, chopped
  • 1 cup chickpeas
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Juice of 1 lemon
  • Fresh parsley

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Sauté onion until soft and translucent.
  3. Add garlic and cook for 30 seconds.
  4. Add carrot, zucchini, and bell pepper and cook until slightly tender.
  5. Stir in chickpeas and spices.
  6. Place couscous in a bowl and pour hot broth over it.
  7. Cover and let it sit for 5–7 minutes.
  8. Fluff couscous with a fork.
  9. Mix couscous with vegetables.
  10. Add lemon juice and fresh parsley, then serve.

Notes

Add raisins for sweetness or toasted almonds for crunch. Store in fridge up to 3 days. Reheat with a splash of water or olive oil.
