1 cup halal breadcrumbs (panko or seasoned)
2 large eggs (room temperature)
1 teaspoon garlic powder (or 1 clove fresh garlic, minced)
1 cup pepperoni-style cheese (non-pork enzymes)
2 tablespoons olive oil (light or extra virgin)
1 1/2 cups alcohol-free marinara sauce
1 teaspoon basil (fresh or dried)
Optional: Parmigiano (halal-certified)


Instructions

Preheat oven to 400°F (205°C)
Season chicken with garlic powder and salt
Dredge chicken in breadcrumbs, shake off excess
Beat eggs in shallow dish for breading
Coat chicken in egg then return to breadcrumbs
Heat olive oil in oven-safe skillet over medium-high
Cook chicken 2 minutes per side until golden
Transfer skillet to preheated oven
