Description

Indulge in a smooth, restaurant-quality meal with this homemade Chicken Alfredo. This recipe centers on a rich, velvety parmesan cream sauce paired with perfectly seared chicken strips and al dente fettuccine. By focusing on fresh, high-quality ingredients like freshly grated parmesan and real heavy cream, you can achieve a signature, silky consistency that clings perfectly to every strand of pasta. It is a decadent, Italian-inspired classic crafted right in your own kitchen, entirely free from processed ingredients.

Ingredients

Scale

1.5 lbs chicken breast (boneless, skinless, sliced into strips)
12 oz fettuccine pasta
2 cups heavy whipping cream
1.5 cups parmesan cheese (freshly grated)
4 cloves garlic (minced)
2 tbsp olive oil
3 tbsp unsalted butter
2 tbsp fresh parsley (chopped)
Salt and black pepper to taste

Instructions

Boil a large pot of salted water and cook the fettuccine until al dente.
Drain the pasta while reserving 1/2 cup of starchy pasta water.
Season chicken strips with salt and pepper.
Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown and cooked through.
Remove the chicken from the pan and set aside.
Melt the butter in the same pan and add minced garlic, sautéing until fragrant.
Pour the heavy cream into the pan and simmer until slightly thickened.
Reduce heat to low and gradually stir in the parmesan cheese until melted and smooth.
Add the chicken and cooked pasta to the sauce, tossing to coat thoroughly.
Add reserved pasta water if needed to loosen the sauce and garnish with fresh parsley.

Notes

Always grate your parmesan cheese from a block for the smoothest melting texture. Avoid using pre-shredded cheese as it contains anti-caking agents that prevent a velvety sauce. Keep the heat controlled to medium-low during the cheese-melting phase to prevent separation.
