Ingredients
Ground beef (90% lean) 1 lb
Medium onion, diced 1
Garlic, minced 3 cloves
Taco seasoning mix 1 tbsp
Shredded cheddar cheese 1 cup
Tortillas (whole-wheat or corn) 8
Tomato salsa 1/2 cup
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
Dice the onion and mince the garlic
In a skillet, cook ground beef over medium heat until browned
Add diced onion, minced garlic, and taco seasoning. Stir to combine and cook for 5 minutes to deglaze the pan
Transfer mixture to a 9-inch parchment paper doughnut shell or round baking dish, forming a layer
Top evenly with shredded cheddar cheese
Bake for 15-20 minutes, until the cheese is melted and golden and the shell is crispy
Place tortillas on another baking sheet. Bake for 5 minutes to warm them
Serve by transferring the filling into tortillas and topping with tomato salsa of your choice
