Ingredients

2 lbs Beef Chuck Roast, cut into 1.5-inch cubes
4 cups Low-sodium Beef Broth
3 large Carrots, sliced into thick rounds
4 medium Yukon Gold potatoes, chopped
1 large Onion, diced finely
2 tbsp Tomato paste
4 cloves Garlic, minced
1 tsp Dried thyme
2 tbsp Vegetable oil
Salt and pepper to taste


Instructions

Pat beef cubes dry with paper towels.
Heat two tablespoons of oil in the Dutch oven over medium-high heat.
Sear the beef in batches until browned on all sides, then remove to a plate.
Add onions to the remaining fat and sauté until translucent.
Stir in tomato paste and garlic, cooking for one minute until fragrant.
Deglaze the pot with a splash of broth to scrape up the flavorful brown bits.
Return the browned beef and any accumulated juices to the pot.
Pour in the remaining beef broth and add the thyme.
Cover with a heavy lid and braise in a preheated oven at 325°F for 2.5 hours.
Add the carrots and potatoes, then continue cooking for an additional 30 minutes until vegetables are tender.

Notes

Ensure you sear the beef in small batches to avoid crowding the pan, which helps achieve a better crust.
You can thicken the gravy further by mashing a few of the potato pieces against the side of the pot at the end.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
