Ingredients
2 lbs lean ground beef
15 oz black beans, drained and rinsed
15 oz kidney beans, drained and rinsed
15 oz corn, canned or frozen
28 oz diced tomatoes, with juices
4 cups beef broth
2 packets taco seasoning
1 medium onion, finely diced
Instructions
Brown the ground beef in a large skillet over medium-high heat until fully cooked.
Drain the excess fat from the skillet.
Sauté the diced onions in the same skillet until translucent.
Combine the cooked beef, onions, beans, corn, tomatoes, broth, and taco seasoning in your slow cooker.
Stir the mixture thoroughly to ensure the seasoning is distributed evenly.
Cover and set the slow cooker to low for 4 to 6 hours.
Stir the soup once halfway through the cooking process to integrate the ingredients.
Notes
You can substitute ground turkey for ground beef for a lighter version. Adjust the spice level by using mild or hot taco seasoning depending on your preference. Leftovers keep well in the refrigerator for up to 4 days and often taste even better the next day.
