Description
These Crispy Gougères are light and airy French cheese puffs made with choux pastry, Gruyère, and Parmesan. Perfect as appetizers or party snacks, they bake until golden and crisp on the outside while staying soft and cheesy inside.

- ½ cup (120ml) water
- ½ cup (120ml) whole milk
- ½ cup (115g) unsalted butter
- 1 cup (125g) all-purpose flour
- 4 large eggs
- 1 cup (100g) grated Gruyère cheese
- ¼ cup (25g) grated Parmesan cheese
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Pinch of nutmeg
Instructions
- Preheat oven to 200°C (400°F) and line baking sheet with parchment.
- Heat water, milk, butter, and salt until boiling.
- Remove from heat and add flour all at once, stirring quickly.
- Return to heat and cook 2–3 minutes until dough forms a ball.
- Cool slightly, then add eggs one at a time, mixing well.
- Stir in grated cheeses, pepper, and nutmeg.
- Pipe or spoon small mounds onto baking sheet.
- Bake 20–25 minutes until puffed and golden brown.
Notes
Use freshly grated cheese for best flavor. Do not open oven early during baking. Reheat briefly before serving to restore crispness.
