Description

This comforting creamy taco soup is the perfect weeknight solution, blending savory ground beef, hearty beans, and sweet corn into a rich, velvety broth. Enhanced with cream cheese for a luxurious texture, this Tex-Mex inspired dish balances zesty spices with wholesome ingredients. It is a simple, one-pot meal that comes together in under forty minutes, providing a warming and satisfying experience that will please the whole family without any complicated cleanup.

Ingredients

Scale

1 lb Ground Beef
1 medium Onion, diced
2 packets Taco Seasoning
15 oz Black Beans, drained and rinsed
15 oz Corn, canned or frozen
28 oz Diced Tomatoes (do not drain)
4 oz Cream Cheese, softened
2 cups Beef Broth

Instructions

Heat a large heavy-bottomed pot over medium-high heat.
Brown the ground beef until completely cooked through and drain the excess fat.
Add the diced onions to the pot and sauté until translucent and soft.
Stir in the taco seasoning until the beef and onions are evenly coated.
Pour in the diced tomatoes with their juices, beef broth, black beans, and corn.
Bring the mixture to a gentle simmer and cook for 15-20 minutes to allow flavors to meld.
Reduce heat to low and stir in the softened cream cheese until fully melted and the soup is smooth.
Serve hot, garnished with your favorite toppings.

Notes

Substitute ground beef with ground turkey for a leaner option. You can adjust the heat level by choosing mild or spicy taco seasoning or adding diced green chilies. Store leftovers in an airtight container in the refrigerator for up to 3 days.
