Description

A refreshing dairy-rich pasta salad with mayonnaise, sour cream, herbs, and cheddar cheese. Perfect as a chilled side dish for summer gatherings, grilled meats, or fresh vegetables.


Ingredients

12 oz (340g) macaroni (elbow or fusilli)
1/2 cup mayonnaise
1/4 cup sour cream or plain Greek yogurt
1 tsp granulated garlic
1 tbsp Dijon mustard
1 cup grated cheddar cheese
1/4 cup chopped parsley
1/2 tsp sea salt
Black pepper to taste


Instructions

Boil 6 cups salted water in a large pot. Add macaroni and cook 8-10 minutes until al dente
Drain and rinse pasta under cold water
In a large bowl, combine mayonnaise, sour cream, granulated garlic, and Dijon mustard
Add cooled pasta and mix until fully coated
Stir in grated cheese and chopped parsley
Season with salt and freshly ground black pepper
Chill 2-4 hours before serving to allow flavors to meld

Notes

Use light mayonnaise or Greek yogurt for a lighter version
Fresh garlic (1 clove) can substitute granulated garlic
Cheddar can be replaced with Gruyère or vegan cheese
Cilantro works as a parsley substitute
Yield increases easily by scaling ingredients proportionally
