Description

Ingredients

2 lbs (900g) red potatoes
1 cup mayonnaise
4 large egg yolks
1/3 cup chopped fresh dill
2 tbsp white vinegar
1 tbsp Dijon mustard
1 1/2 tsp salt
Black pepper to taste
1/2 tsp smoked paprika (optional)


Instructions

Wash potatoes and pierce skin with a fork.
Boil in salted water until tender (15-20 minutes), drain immediately.
Cool potatoes in ice water for 5 minutes, then pat dry.
Whisk egg yolks, mayonnaise, vinegar, mustard, salt, pepper, and paprika.
Fold dressing into cooled potatoes gently until fully coated.
Chill for 1 hour before serving.
