1 lb pasta (penne or fettuccine)
1.5 cups heavy cream, room temperature
1 cup parmesan cheese, freshly grated
4 cloves garlic, minced finely
0.5 cup low-sodium chicken broth
2 tbsp extra virgin olive oil
1 tsp dried Italian seasoning
Salt and black pepper to taste


Instructions

Boil a large pot of salted water and cook pasta until al dente.
Drain the pasta and reserve 0.5 cup of the cooking liquid.
Heat olive oil in a large skillet over medium-high heat.
Season chicken with salt, pepper, and Italian seasoning.
Brown the chicken pieces until golden and cooked through, then set aside.
In the same skillet, sauté minced garlic for one minute.
Pour in chicken broth and scrape up any browned bits from the pan.
Add the heavy cream and bring to a gentle simmer.
Stir in the parmesan cheese until the sauce is smooth and slightly thickened.
Return the cooked chicken to the skillet.
Add the cooked pasta and toss to coat thoroughly, using reserved liquid if needed to adjust consistency.

Notes

Use room temperature cream to prevent the sauce from breaking when added to the hot skillet. If the sauce becomes too thick, add a small splash of the reserved pasta water to loosen it. For an extra touch of color, garnish with fresh parsley before serving.
