Ingredients
30 oz whole kernel corn, drained or thawed
8 oz cream cheese, softened
2 cups sharp cheddar cheese, freshly shredded
0.5 cup Greek yogurt
0.5 cup green onions, sliced
1 tsp garlic powder
1 cup butter crackers, crushed
Instructions
Preheat your oven to 375°F.
Combine softened cream cheese and Greek yogurt in a large mixing bowl until smooth.
Fold in the drained corn, one cup of shredded cheddar, garlic powder, and sliced green onions.
Transfer the mixture into a greased 9×13 baking dish and spread into an even layer.
Sprinkle the remaining cup of cheddar cheese over the top of the corn mixture.
Scatter the crushed crackers evenly across the cheese layer.
Bake for 30 minutes until the edges bubble and the top turns golden brown.
Remove from the oven and let rest for 5 minutes before serving.
Notes
You can substitute sour cream for Greek yogurt if preferred. For the best melt and flavor, always grate your own cheddar cheese rather than using pre-shredded varieties. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
