- 2 garlic cloves, minced
- 1 teaspoon cumin

Instructions
- Heat olive oil in a pan.
- Sauté onion until soft.
- Add garlic and cook briefly.
- Add carrots and cook until slightly tender.
- Add zucchini, pepper, and tomatoes.
- Season with spices, salt, and pepper.
- Cook until vegetables soften.
- Add chickpeas and mix well.
- Pour hot broth over couscous.
- Cover and let steam for 5 minutes.
- Fluff couscous with a fork.
- Mix couscous with vegetables and finish with lemon juice and parsley.
Notes
Use warm broth instead of water for deeper flavor. Let couscous rest covered for best texture. Add lemon juice at the end for freshness.
