- 1 kg lamb shoulder, cut into chunks
- 2 cups couscous
- 2 onions, chopped
- 3 garlic cloves
- 3 carrots, sliced
- 1 zucchini, chopped
- 1 can chickpeas
- 3 tbsp olive oil
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and black pepper
- 1 liter broth
- Fresh parsley
Instructions
- Heat olive oil and brown lamb pieces.
- Remove lamb and sauté onions until soft.
- Add garlic and spices, stirring until fragrant.
- Return lamb to pot and mix well.
- Add broth and simmer for 1.5–2 hours.
- Add carrots, zucchini, and chickpeas.
- Cook until vegetables are tender.
- Prepare couscous with hot broth and cover.
- Fluff couscous with a fork.
- Serve lamb stew over couscous and garnish with parsley.
Notes
