- 1 kg chicken pieces
- 2 cups couscous
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 can chickpeas (optional)
- 3 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- Salt and black pepper
- 1.5 L chicken broth
- Fresh parsley
Instructions
- Heat olive oil and brown chicken.
- Remove chicken and sauté onion and garlic.
- Add spices and stir briefly.
- Return chicken and add broth.
- Simmer for 30 minutes.
- Add vegetables and cook 20 minutes.
- Prepare couscous with hot broth.
- Fluff couscous and serve with chicken stew.
Notes
Brown the chicken well for deeper flavor. Add extra broth when reheating to keep couscous soft. Chickpeas are optional but add great texture and protein.
