Description

This exquisite coffee cake banana bread merges the moist, aromatic sweetness of a classic banana loaf with the irresistible, buttery crunch of a spiced cinnamon streusel topping. Designed for brunch enthusiasts, it provides a perfect textural contrast that pairs beautifully with a hot cup of coffee or tea. By utilizing overripe bananas and a precise streusel technique, this recipe elevates a humble quick bread into a professional-grade morning treat that is simple to prepare yet gourmet in presentation and flavor.

Ingredients

Scale

3 large ripe bananas, mashed
2 cups all-purpose flour
1 cup brown sugar
1/2 cup unsalted butter, cold and cubed
2 teaspoons ground cinnamon
2 large eggs, room temperature
1 teaspoon baking soda
1/2 cup unsalted butter, melted (for batter)
1 teaspoon vanilla extract
1/4 teaspoon salt

Instructions

Preheat your oven to 350 degrees Fahrenheit and grease a standard 9×5 inch loaf pan.
Mash the peeled bananas in a large bowl until mostly smooth, leaving small chunks for texture.
Whisk the eggs, melted butter, and vanilla extract into the mashed bananas until combined.
Fold in the flour, sugar, baking soda, and salt into the wet mixture until just incorporated.
In a separate small bowl, mix flour, brown sugar, and ground cinnamon for the topping; cut in the cold, cubed butter until crumbly.
Pour the banana batter into the prepared loaf pan and spread evenly.
Sprinkle the crumb topping generously over the surface of the batter.
Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Ensure the butter for the streusel remains very cold to achieve the signature crumbly texture. Store in an airtight container at room temperature for up to 3 days. Can be frozen for up to 2 months.
