Description

This hearty, crowd-pleasing taco soup features a robust blend of browned ground beef, zesty beans, sweet corn, and savory spices. It is a perfect one-pot meal for busy weeknights, offering a rich, comforting flavor profile that relies on simple pantry staples. The combination of chili powder, cumin, and ranch seasoning provides a unique, creamy depth. It is easy to prepare, stores beautifully for leftovers, and serves a crowd with minimal effort.

Ingredients

Scale

1 lb Ground Beef
1 medium Onion, finely diced
1 can (15 oz) Chili Beans, undrained
1 can (15 oz) Black Beans, rinsed and drained
1 can (28 oz) Diced Tomatoes, with juices
1 can (15 oz) Whole Kernel Corn, drained
1 packet Ranch Dressing Mix
1 packet Taco Seasoning
2 cups Beef Broth

Instructions

Heat a large stockpot over medium-high heat.
Add ground beef and diced onion to the pot.
Cook until the beef is browned and the onions are translucent.
Drain excess grease from the pot.
Stir in the taco seasoning and ranch dressing mix until the beef is evenly coated.
Add the undrained chili beans, drained black beans, diced tomatoes with juices, corn, and beef broth.
Bring the soup to a simmer over medium heat.
Reduce heat and let the soup simmer for about 20-25 minutes to allow flavors to meld.
Serve hot, optionally garnished with cheese, cilantro, or sour cream.

Notes

Substitute ground beef with ground turkey for a leaner version. Adjust beef broth amount if you prefer a thicker or thinner soup consistency. Store leftovers in an airtight container in the refrigerator for up to 4 days.
