Description
A creamy, tangy, and crunchy Southern staple made with boiled potatoes, tangy mayonnaise dressing, onions, and pickles. Perfectly balanced for barbecues or family meals.
Ingredients
5 lbs red potatoes, peeled and cubed
2/3 cup mayonnaise
2 tbsp mustard
1/4 cup vinegar
1 small onion, finely chopped
1/2 cup pickles, sliced
Salt to taste
Pepper to taste
Instructions
Boil cubed potatoes in salted water until tender (15-20 minutes). Drain and cool.
Whisk mayonnaise, mustard, vinegar, salt, and pepper in a bowl.
Add cooled potatoes, chopped onion, and pickles to the dressing. Mix thoroughly.
Chill in the refrigerator before serving.
Notes
Use Greek yogurt instead of mayonnaise for a lighter version.
Dijon or yellow mustard can replace standard mustard.
Apple cider vinegar adds a fruity tang.
Red onion增添 sharp flavor.
Chill for at least 30 minutes before serving for best flavor.
