- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter, cold
- 3 tablespoons cold water
- 4 eggs
- 1 cup heavy cream
- ½ cup whole milk
- 150g bacon
- 1 small onion
- 1 cup Gruyère cheese
- Salt and pepper
- Pinch of nutmeg
Instructions
- Prepare dough and chill for 30 minutes.
- Roll out and bake crust for 15 minutes.
- Cook bacon and sauté onion.
- Whisk eggs, cream, milk, and seasoning.
- Add bacon, onion, and cheese.
- Pour into crust and bake 30–35 minutes.
- Cool slightly before serving.
Notes
Use cold butter for a flaky crust. Avoid overbaking to keep the filling creamy. Store in fridge for up to 3 days.
