Description

Classic Pine Nut Cookies are soft almond-based treats topped with golden pine nuts. These delicate Mediterranean cookies offer a chewy center and nutty crunch, perfect for holidays, coffee time, or elegant gatherings.


Ingredients

  • 3/4 cup granulated sugar
  • 2 large egg whites
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon almond extract
  • 1 cup pine nuts
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 170°C (340°F) and line a baking sheet with parchment paper.
  2. Mix almond flour, sugar, and salt in a bowl.
  3. Whisk egg whites with vanilla and almond extract until frothy.
  4. Combine wet and dry ingredients to form a soft dough.
  5. Chill dough for 20–30 minutes.
  6. Roll dough into small balls and place on baking sheet.
  7. Press pine nuts generously onto each cookie.
  8. Bake for 15–18 minutes until lightly golden.
  9. Cool completely and dust with powdered sugar if desired.

Notes

Use fresh almond flour for best flavor. Lightly toast pine nuts before pressing for deeper nuttiness. Store cookies in an airtight container for up to 5 days.
