- 1 cup couscous
- 1 cup vegetable broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 carrot, diced
- 1 zucchini, diced
- ½ cup chickpeas
- Salt and black pepper
- ½ teaspoon cumin
- ½ teaspoon paprika
- Fresh parsley
- Juice of ½ lemon
Instructions
- Sauté onion in olive oil until soft.
- Add carrot and zucchini and cook lightly.
- Stir in chickpeas and spices.
- Pour hot broth over couscous and cover for 5 minutes.
- Fluff couscous with a fork.
- Mix with vegetables and finish with lemon and parsley.
Notes
