Description

This classic couscous recipe is light, fluffy, and full of Mediterranean flavor. Made with vegetables, chickpeas, and warm spices, it’s a quick and comforting dish perfect for any day.


Ingredients

Scale
  • 1 cup couscous
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 1 zucchini, diced
  • ½ cup chickpeas
  • Salt and black pepper
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • Fresh parsley
  • Juice of ½ lemon

Instructions

  1. Sauté onion in olive oil until soft.
  2. Add carrot and zucchini and cook lightly.
  3. Stir in chickpeas and spices.
  4. Pour hot broth over couscous and cover for 5 minutes.
  5. Fluff couscous with a fork.
  6. Mix with vegetables and finish with lemon and parsley.

Notes

Fluff couscous gently for best texture. Add lemon juice at the end for freshness. You can add chicken or extra vegetables if desired.
