Ingredients
1 1/2 lbs (680g) chicken breast
12 corn or flour small tortillas (gluten-free optional)
2 tbsp lime juice
1 tsp smoked chili powder
1 tsp cumin (to toast)
1/4 cup chopped cilantro
1 tbsp oil (for cooking)
1 cup chopped onions (added separately in step)
1 tsp salt (for marinade)
Instructions
Cut chicken into 1-inch cubes and place in a bowl
Whisk lime juice, chili powder, cumin, and salt to form marinade
Coat chicken evenly and refrigerate for 20-30 minutes
Heat skillet over medium-high heat
