Description

Experience the ultimate comfort meal with this classic beef stew. Tender chunks of beef chuck roast are seared to perfection and slow-cooked in a rich, savory beef bone broth with hearty root vegetables. This nutrient-dense dish relies on traditional techniques to develop deep, complex flavors, making it a perfect, satisfying dinner that tastes even better the next day. A wholesome, family-friendly recipe that requires minimal fuss but delivers professional-level results every single time.

Ingredients

Scale

2.5 lbs Beef Chuck Roast, cut into 1.5-inch cubes
3 large Carrots, sliced into thick rounds
3 large Russet Potatoes, peeled and cubed
1 large Yellow Onion, finely chopped
4 cups Beef Bone Broth, low sodium
2 tablespoons Tomato Paste
1 teaspoon Dried Thyme
4 Garlic Cloves, minced finely
3 tablespoons All-Purpose Flour
2 tablespoons Vegetable Oil
Salt and black pepper to taste

Instructions

Coat the beef cubes in flour seasoned with salt and black pepper until lightly dusted.
Heat two tablespoons of oil in a heavy-bottomed Dutch oven over medium-high heat.
Brown the beef cubes in small batches to ensure each side develops a deep crust and remove from the pot.
Add the onions to the pot and sauté until translucent.
Stir in the garlic and tomato paste, cooking for another minute until fragrant.
Pour in the beef bone broth, scraping the bottom of the pot to release any browned bits.
Return the seared beef to the pot, add the thyme, and bring to a gentle simmer.
Cover and cook on low heat for approximately 2.5 hours.
Add the carrots and potatoes, then continue cooking for another 30-45 minutes or until vegetables are tender.
Adjust seasoning if necessary before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavor profile often improves after resting overnight as the collagen continues to break down and blend with the aromatics.
